Is it just me, or do we all get busier as the years go by? Between work, travel, family and social activities, my husband and I barely have time to eat, much less cook. We know it’s healthier and more responsible to eat at home, but you and I both know the siren song that is the restaurant down the street. So, how do you cook quick, flavorful dishes at home? Keep them simple!
Fajitas & Burritos
My favorite dish to make quickly is a quesadilla. It’s made with only six ingredients, including refried beans, cheese and cumin. Top it with salsa and sour cream, and you have an easy, healthy meal.
Need something even quicker? Try a burrito. Black beans, chicken, cheese and spices are all rolled up into a burrito-sized tortilla. The best part: It’s ready in just over 20 minutes.
Salads & Salsas
Have a can of cannellini beans on hand? Combine it with tuna and sliced onion for a quick, healthy salad that’s perfect for lunch.
If you have extra time to chop, or a second set of hands, make a simple black bean and pineapple salsa. Pair this with some crusty bread, and you have a filling meal that doesn’t even involve the stove.
Salsa is also my answer when I have friends coming over. Make it ahead of time, and serve it with tortilla chips when the guests arrive. (You could also use this to top the quesadilla.)

There will never be enough time in the day… or night. But with ideas like the ones above, at least we’ll have time to make meals in just a few minutes.
